Chocolate Nutella Strawberry Cream Cake

They say a picture paints a thousand words-in this case we agree! We think this cake looks good enough to eat right off the screen.

Summertime desserts are usually lighter and include  some type of ripe, juicy fruit  in season.  This cake is simple in ingredients and in assembly as well. We guarantee it will be a big hit at your next party or barbecue.

Here’s what you need:

Chocolate cake-either from a box or your favorite homemade recipe

Nutella

1 pint Whipping Cream (whipped to perfection-add a tsp of vanilla and a couple of tablespoons powdered sugar to sweeten the whipping cream)

2 pints ripe strawberries (washed, sliced, with a squeeze or two of lemon or lime juice over them-add a sprinkle of sugar if needed to make them juicy)

Use two 9 inch cake pans to bake the cake, if you have them, this gives you a slightly thinner cake layer.  After you bake and cool your cake layers, simply place one layer on a cake stand, spread the top with a generous amount (1/3 cup) of Nutella, then spread one half of the  whipped cream over the Nutella, add half the strawberries, top with the other cake layer and repeat the process.

This cake is made to be consumed the same day-so wow your friends and family at your next event!

The first time I had one of these was in Italy, last summer. I instantly fell in love and had to try and make them for myself. These are so yummy and SO easy! And friends, the best part is that they are not fattening. So go ahead and indulge, I sure did!

Candied Orange Slices dipped in Dark Chocolate

4 ORANGES SLICED AND HALVED

4 CUPS SUGAR

4 CUPS WATER

7 OZ DARK CHOCOLATE

2 TBS SALTED BUTTER

Combine sugar and water in a pot bring to a boil, add sliced oranges.  Reduce heat to a simmer. Let simmer for 2 hours. Place them to dry on a cookie sheet for 24 hours.

Melt chocolate and butter over a double boiler, dip orange slices in chocolate place on a sheet pan with wax paper. Let them cool in the fridge for about 30 mins.

NOW EAT!

I’m not a huge fan of cupcakes but, every now and then I get a little craving for one. Lets face it, we all do and folks, these sure hit the spot.

Rich dark chocolate cake with a light peppermint buttercream. These are sure to get you in the “Holiday Spirit!”  Should these be a new addition to the menu?

Well, let me just say this, I’m pretty sure heaven’s gates opened up the first time I tried one of these. Nothing, and I mean NOTHING goes better than mint and chocolate. I will argue that until the cows come home and until fat lady sings!

These are perfect for the holidays; brownie on the bottom, mint buttercream in the middle and a dark chocolate ganache on top. Be sure to look for them on our menu! Happy Holidays!

S’more Whoopie Pies Anyone? November 14, 2012

S’mores are my all time favorite, they bring back memories of camping every summer; when we would sit around the campfire, laughing, sharing stories, and making new memories. There is nothing better in the entire world! This is a campfire favorite that you can enjoy without the campfire. These babies consist of two rich chocolate cakes with a dreamy marshmallow filling, all topped with a layer of ganache and graham cracker crumbs. It doesn’t get much better than that, my friends! These will be a scrumptious addition to our menu! Enjoy 🙂 

 

Peanut Butter S’mores Bars October 3, 2012

S’mores have got to be my all-time favorite. I don’t think I’ve ever met someone who DOESN’T like S’mores! It’s one of those things that reminds me of my childhood. Growing up camping every summer with family and friends, S’mores were the campfire favorite, and we ate them until our belly’s were so full that we couldn’t move. These bars are a S’more combined into one pan, but there’s no campfire needed here! These are filled with lots of chocolate, marshmallows, and graham cracker…and a special surprise …peanut butter cups. These are the best thing since sliced bread!!! …No, but really.

 

S’more Pie anyone? March 26, 2012

We  think anyone would agree that the best part of camping is the S’more. Why not make a pie?  We have been testing and trying different combinations and have finally settled on the finalist.  Meet Katiepie’s S’more pie.  
Graham cracker crust, chocolate ganache, homemade marshmallow, chocolate silk filling and more homemade marshmallow-in that order. We love marshmallow-especially homemade, not too sweet but creamy and decadent.  You think you only want one bite, but then you want S’more!

This is a yummy addition to our menu.

Shortbread, Orange and Chocolate February 29, 2012

These cookies have some of our favorite flavors.  The best orange-apricot marmalade between two light buttery shortbread cookies dipped in dark chocolate!

This recipe is not our invention but comes from a fabulous bakers cookbook, “Sarabeth’s Bakery, From My Hands to Yours”, Rizzoli, New York.  This book is full of incredible recipes, ideas, and just good information for any baker. We were lucky enough to find her jam at a local store and it is incredible, (good to eat with a spoon).  You could also substitute raspberry jam and create another yummy taste sensation.

German Chocolate, Caramel, & Pecans…. February 7, 2012

Here they are, the best brownies in the world. Layers of rich chocolate, warm caramel, crunchy pecans and of course powdered sugar for a sweet topping. The perfect balance. One bite of these and you will be in love. Credit given to The Pioneer Woman.

An Oldie But Goodie December 23, 2011

 Khalua Cake-just a look at the recipe tells you it is much-loved.  I wish we could claim this as an original but it comes from Carville, a dear family friend, who had actually forgotten about the recipe until I mentioned it recently.

It is simple to make,  incredibly moist and full of wonderful chocolate and Khalua flavor.  I originally made the cake in a bundt pan, which makes a beautiful presentation. Years later I started making the cake in mini bundt pans so I could give them as gifts. Now I have  switched to mini muffin pans and they make darling little bite size cakes. Don’t be fooled-you can’t eat just one.

We want to share the  recipe for this yummy treat with you  and hope you will enjoy it with your loved ones.

Khalua Cake

1 pkg white cake mix

1 sm pkg instant chocolate pudding

3 eggs

2/3 cup vegetable oil

2/3 cup vodka

1/3 cup Khalua

1/4 cup water

Mix all ingredients in a large bowl, mix until well blended.  Pour into a prepared bundt pan.

Bake at 350 degrees for approximately 50 minutes. Let cake cool in pan for 10 minutes and then invert and cool on wire rack.

Drizzle

3/4 cup powdered sugar

Khalua

When cake is cool mix powdered sugar and desired amount of Khalua-depending on the consistency you want for he drizzle-and pour over bundt cake.
