We love lemons and are always looking new ways to enjoy them. Who knew candied lemons were so easy to make and so yummy?! Lemons are also good for your digestive system after a meal-so technically we don’t really count them as a sweet treat. 🙂
The process is quick and easy, so give it a try-you won’t be disappointed. An added bonus is the leftover syrup-it’s great for iced tea, hot tea or a lemon drop martini!
2 Meyer Lemons, sliced thin (1/8 inch)
3/4 cup water
1 cup sugar
2 TBS lemon juice
Mix water, sugar and lemon juice in a large non-reactive skillet. Add lemon slices in a single layer. Simmer for 15 to 20 minutes until syrup is thick and lemons are softened.
When done, place lemons in a single layer on a cookie sheet lined with wax paper. Cool lemons and then lay them in a single layer in a covered container. Lemons will last 2 to 3 days in the refrigerator.
